Every cut has a name
The square cut is Kagoshima A5 Wagyu tenderloin; the long cut is beef tongue.
The chef introduces them separately so guests know what is being prepared and how each cut will be cooked.
What the team confirms and prepares
Seasonal seafood arrives by air several times each week. Nha Trang ornate spiny lobster is sent directly from its source; depending on the set and actual arrivals, THE GU also serves Korean abalone, Norwegian black cod, Norwegian snow crab, king crab, Boston lobster and Japanese kinki. Not every ingredient appears in every set; the team confirms availability for the dining date.
